Deliciously smoky BBQ chicken thighs that are easy to prepare and perfect for a weeknight dinner.

- 4 pieces boneless skinless chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup sugar free ketchup
- 2 tablespoons apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon liquid smoke
- 2 tablespoons erythritol
Instructions
- Preheat oven to 400°F.
- In a bowl combine olive oil, smoked paprika, garlic powder, onion powder, chili powder, ground cumin, salt, and black pepper.
- Rub the spice mixture evenly over both sides of the chicken thighs.
- In another bowl whisk together sugar free ketchup, apple cider vinegar, Worcestershire sauce, liquid smoke, and erythritol.
- Place chicken thighs on a baking sheet and bake for 15 minutes.
- Brush the chicken with half of the BBQ sauce and bake for another 10 minutes or until internal temperature reaches 165°F.
- Remove chicken from the oven and brush with remaining BBQ sauce.
- Let rest for 5 minutes before serving.
Notes
- For extra flavor, let the chicken marinate in the spice mixture for a few hours or overnight.
- Check the internal temperature with a meat thermometer to ensure the chicken is fully cooked.
