Ingredients
Scale
- 6 large eggs
- 1/4 cup milk
- 1 cup cheese (grated, cheddar or feta)
- 1/2 cup bell peppers (chopped)
- 1 cup spinach (fresh)
- 1/2 cup onion (diced)
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 cup fresh herbs (chopped)
Instructions
- Preheat your oven to 375°F, allowing it to warm up while you prepare the ingredients.
- In a large bowl, combine 6 large eggs and 1/4 cup of milk. Whisk until the mixture is fluffy and bright yellow.
- Heat 2 tablespoons of olive oil in a skillet over medium heat. Add 1/2 cup of diced onions and sauté until they’re fragrant and translucent, about 3-4 minutes.
- Toss in 1/2 cup of chopped bell peppers and 1 cup of fresh spinach. Cook for another 3-4 minutes, until the veggies are tender.
- Fold the sautéed veggies into the egg mixture, along with 1 cup of grated cheese, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, and 1/4 cup of fresh herbs.
- Carefully pour the frittata mixture back into the hot skillet. Cook on the stovetop for 2-3 minutes until the edges begin to set.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes until the frittata is puffed and golden brown on top.
- Once done, let it rest for 5 minutes before slicing.
