Sweet and Sour Meatballs

Description

These sweet and sour meatballs are easy to make in a crock pot and are perfect served over rice.


Ingredients

Scale
  • 1 package (32 oz.) Frozen Meatballs
  • 1 can Pineapple Tidbits (Do Not Drain)
  • 1/2 cup Brown Sugar
  • 1/2 cup ketchup
  • 1/2 cup rice vinegar
  • 2 TBSP Corn Starch
  • 3 TBSP Soy Sauce
  • 1 Red Bell Pepper (Cut into large pieces)

Instructions

  1. Whisk together the brown sugar, ketchup, rice vinegar, soy sauce and cornstarch.
  2. Place the meatballs, pineapple and diced red bell peppers in a 6 quart crock pot. Pour the sauce mixture over the top.
  3. Cover and cook on low for 4-5 hours or on high for 2-2.5 hours.
  4. Serve over white rice and enjoy!

Notes

  • For a spicier kick, consider adding chopped jalapeños or a dash of hot sauce to the sauce mixture.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
