A delicious and easy bruschetta recipe topped with ripe tomatoes, fresh basil, and toasted bread.

- 1 French baguette or ciabatta loaf, sliced into 1/2-inch pieces
- 3–4 medium ripe tomatoes, finely chopped
- 2–3 garlic cloves, minced
- 1/4 cup fresh basil leaves, chopped
- 3 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar (optional)
- Salt and pepper to taste
- 1/4 cup grated Parmesan or mozzarella (optional for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- Arrange the sliced bread on a baking sheet. Brush lightly with 1–2 tablespoons olive oil.
- Toast the bread in the oven for 5–7 minutes until golden (watch closely to avoid burning).
- In a medium bowl, combine chopped tomatoes, minced garlic, basil, remaining olive oil, balsamic vinegar, salt, and pepper. Mix gently.
- Spoon the tomato mixture evenly over the toasted bread slices.
- Sprinkle with Parmesan or mozzarella if desired.
- Return to the oven for 2–3 minutes to slightly melt the cheese and warm the toppings.
- Serve immediately while warm and crispy.
Notes
- You can use cherry tomatoes instead of regular tomatoes.
- For a dairy-free version, skip the cheese or use a plant-based alternative.
