Description

A delicious and easy bruschetta recipe topped with ripe tomatoes, fresh basil, and toasted bread.


Ingredients

  • 1 French baguette or ciabatta loaf, sliced into 1/2-inch pieces
  • 34 medium ripe tomatoes, finely chopped
  • 23 garlic cloves, minced
  • 1/4 cup fresh basil leaves, chopped
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar (optional)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan or mozzarella (optional for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Arrange the sliced bread on a baking sheet. Brush lightly with 1–2 tablespoons olive oil.
  3. Toast the bread in the oven for 5–7 minutes until golden (watch closely to avoid burning).
  4. In a medium bowl, combine chopped tomatoes, minced garlic, basil, remaining olive oil, balsamic vinegar, salt, and pepper. Mix gently.
  5. Spoon the tomato mixture evenly over the toasted bread slices.
  6. Sprinkle with Parmesan or mozzarella if desired.
  7. Return to the oven for 2–3 minutes to slightly melt the cheese and warm the toppings.
  8. Serve immediately while warm and crispy.

Notes

  • You can use cherry tomatoes instead of regular tomatoes.
  • For a dairy-free version, skip the cheese or use a plant-based alternative.
